Week 4 of the Fall CSA is here, along with some weather that is feeling much more fall-like! This weather is great for spending time in the kitchen, whipping up cozy soups, chilis, and firing up the oven!
Escarole can be used as lettuce, though it is a bit more bitter than your average. For this reason, some people like to cook it! A classic combination is Escarole and Bean Soup, where the creaminess of beans balances assertive escarole. Momma Priapi likes to add sausage to this recipe, if you are into that kind of thing — it’s yummy!
One of our favorite new eggplant recipes is Classic Eggplant Lasagna, a good deal less fussy than eggplant parmesan, just as delicious, and gluten free! With a jar or two of Priapi marinara from the farmstand you can elevate this dish to local artisan and serve it at a dinner party! (You can thank us later).
