Use first (will keep about a week): lettuce

Store very well (a month or more): radishes, carrots, sweet potatoes*
*certified organic items, purchased from other local farms (Mother Earth Mushrooms, Quail Cove Farms, Machipongo, VA)

Baby Joi Choi Salad With Sesame Dressing <--MUST TRY! This salad is the best! We have moved all of our USDA organic veggie transplants from Greenhouse 2 to Greenhouse 3 at the farm. In House 3 our baby herbs and onions will be spoiled by warmer nights (we'll keep the thermostat around 60 degrees for them) so they get nice and big for planting out in the garden April 1st (as long as the weather cooperates!) Soon we'll be sowing early varieties of tomatoes and basil. One of the best things about working with the seasons, we are always planning for planting ahead of the weather.
