Clockwise, from upper left corner: claytonia, red leaf lettuce, arugula, mustard greens, rainbow carrots, joi choi, french breakfast radishes, spinach (large share pictured).

Use first (will keep about a week in the fridge): claytonia, arugula, mustard greens, radish tops
Store a little longer (about 2 weeks): red leaf lettuce, joi choi, spinach
Store very well (a month or more): radishes, carrots

While your produce is super fresh, it has not been washed! Please take care to wash your vegetables well before enjoying.

Happy Wednesday! It is definitely beginning to look a lot like spring by the contents of your CSA box! All root crops are just about gone, but lots of leafy greens are coming in! This box is no exception. We do recommend that you get into your bags of greens (particularly the claytonia and arugula) ASAP. They were a bit wet this morning when we harvested and will love to dry out a bit when they make it into your refrigerator. You could accomplish this by opening up the bag, fluffing its contents, and leaving the bag open in your fridge for a few hours. Or just eat them right away!

You will also notice your mustard leaves may be a bit frost-burned; they did not enjoy being exposed to the cold air last weekend when the high tunnel lost its cover! We hope you can pardon their appearance and enjoy their spicy tenderness all the same. If cooking them, the burned bits wont matter much, if enjoying your mustard greens in a salad (yes, people do that) you may want to trim them. Left sealed in a bag for more than a few days, the burned bits will start to go bad, so please plan accordingly. Spring is the perfect time to visit the garden center! We are now open 7 days a week, so start planning your visit today!
