Fall CSA 2017 Week 6

Use first (will keep about a week in the fridge): spicy mix, turnip tops, kale (lasts longer but stems will toughen).

Store a little longer (about 2 weeks): mustard greens, lettuce, NZ spinach, rainbow chard.

Store very well (a month or more): Onion, radish, turnips.

All veggies this week(but for the onion) store best in a bag or sealed container in the refrigerator. Onions like cool dark spaces, but not quite as cool and dark as the refrigerator 🙂

Yes – we are encouraging you to eat your turnip greens! They are tender and loaded with nutrients. Try them steamed or sauteed with your mustard greens for a quick and easy side dish. The Hakurei turnips themselves are great raw or cooked. If you have never tried roasting them whole before, we would highly recommend it!

Dragon radishes are not as spicy as their name suggests. However, if you don’t find them to your liking raw, they too are delicious roasted.

Rainbow chard is one of our favorite vegetables. It is loaded with iron, easy on the eyes, and pretty versatile, too. Smoothies, soups, with your eggs, the sky is the limit! Check out the recipes below for some ideas & happy Wednesday!

Fall CSA 2017 Week 5

Welcome to Week 5 of the Fall CSA. These fall veggies make your CSA share look like a box of jewels. Can’t get to them all right away? Do not fret! Freshly harvested vegetables have a much longer shelf life than those you might find in the grocery store…here are some guidelines to help order your operation —

Use first (will keep about a week in the fridge): tatsoi, cilantro, radish tops

Store a little longer (2 weeks): baby kale, fennel fronds, lettuce

Store very well (a month of more): Cabbage, fennel bulbs, radishes, leeks

All of your veggies this week store best in a bag or sealed container in the refrigerator.

If this is your first time trying tatsoi, it is a delightful Asian green that is very similar to spinach in its capacities. It is mild enough to be enjoyed raw in a salad, and hearty enough to enjoy steamed, sauteed, or wilted in your favorite soup.

We hope you are still enjoying your cilantro, this highly coveted herb is doing beautifully in our garden right now, but will not endure cold weather well. Your fennel fronds make a lovely substitute for dill, so we were sure to leave some for you to enjoy.

Some recipe ideas for your box this week:
Celery, Apple, Fennel Slaw(we have beautiful Honey Crisp apples in the farmstand this week from Milburn Orchards in Elkton)

Radish & Tofu Summer Rolls(once you start making summer rolls, you will be hooked! We always keep rice wrappers on hand for quick, light, and easy dinners! The combinations are endless — no tofu on hand? Try fish or shrimp. Rice wrappers can be found at natural food shops, and even most grocery stores in the international aisle).

Leek & Sweet Potato Soup(take note of the leek washing tips in this recipes! Submerging them in water is another good trick for removing all ‘grit’)

Fall CSA 2017 Week 4

It would appear cooler weather is moving in to stay, and your box is one more indicator. Dark leafy greens love cool weather, and we hope you love dark leafy greens!

The mustard greens in your box this week are a milder variety, and are quite tender as they are young. They work well in a salad mixed with other greens or on their own, and pack a powerful nutritional punch (you can read more about it here.) If you are into mustard the condiment on your wraps and sandwiches, replacing it with mustard greens really makes them shine!

The french breakfast radishes in your box are classically the mildest of all radishes. Of course they work well in salad, but they are also great dipped in a bit of tempered butter (a classic french appetizer), hummus, or very lightly steamed (tops and all) as a striking side dish.

Red celery is a fun change from green, but can be used in the same ways. Our slender celery stalks are super flavorful, great gently sauteed or juiced.

Golden beets are awesome! They are milder than their red counterparts and are less likely to stain hands when they are worked with. If roasting, be sure to keep an eye on your beets, as they will show blackening more readily than red beets.

The other veggies in your box are probably pretty familiar by now — we hope you love eating them as much as we loved growing them!
